Hyssop is a beautiful perennial herb with narrow, aromatic leaves and tall spikes of vibrant blue to purple flowers. Native to southern Europe and the Mediterranean, this herb grows compact and bushy, adding both beauty and purpose to your garden. The flavour of hyssop is slightly bitter, minty, and reminiscent of thyme, making it a delightful addition to soups, salads, stews, and herbal teas. Its flowers are also edible and can be used as a garnish. Known for its medicinal properties and ancient use in traditional remedies, hyssop brings a touch of history and fragrance to every kitchen garden.
Planting instructions
Hyssop can be easily grown in garden beds or containers. Sow seeds about 0.5 cm deep in well-draining soil and maintain a spacing of 30 cm between plants to allow good air circulation, Hyssop plants typically grow between 30–60 cm tall, forming compact, tidy clumps suitable for small gardens and containers.

Hyssop is generally pest-resistant but may occasionally attract aphids or whiteflies. Good air circulation and avoiding overwatering help prevent fungal issues.

Prefers well-drained, sandy or loamy soil with moderate fertility. Avoid heavy or waterlogged soils, as they can cause root rot.

Choose a sunny spot that receives at least 6 hours of direct sunlight daily. Partial shade is tolerated but may reduce flowering.

Ideal growing temperature ranges between 18–25°C. Hyssop can tolerate mild frost but thrives best in warm, sunny conditions.

Water moderately and allow the soil to dry slightly between waterings. Overwatering can harm the roots, while drought may affect flowering.
how to harvest
Harvest leaves and flowers after 90–100 days of sowing when the plant is well-established. Cut the stems early in the morning for the best flavour. Use the leaves to season soups, stews, and poultry dishes, or steep them in hot water to make aromatic herbal tea.
